Happy day lovelies! Genevieve here from Celebrate TODAY …the superchick way! As per Rebekah’s sweet request, I’m popping in to share my decadent EGGNOG CUPCAKE recipe! Trust me when I tell you that these blissful bites are da bomb! Simple, sinful and infused with RUM! Could it get any better?!!! I think NOT! (wink) Truly, they’re so incredibly yummy, that I’ve made them my “signature” treat this year! Hope you will too! Cheers!
The Best Eggnog Cupcakes EVAH!
Makes 12 perfectly sized cupcakes! ~ I use a ¼ cup to scoop out the batter!
DRY INGREDIENT:
1 1/3 cups all-purpose flour
1 cup sugar
½ tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
¼ tsp. cinnamon
WET INGREDIENTS:
¼ cup rum
1 cup eggnog
¼ cup vegetable oil
1 tbsp. apple cider vinegar
1 tsp vanilla extract
DIRECTIONS:
Combine dry ingredients (I use a whisk!)
Combine wet ingredients (… still using a whisk!)
Add dry to wet and beat!
Bake 23 minutes then let cool!
BUTTERCREAM:
2 ½ sticks unsalted butter
2 ½ cup powdered sugar
2 ½ tbsp. eggnog (in lieu of cream)
1 tbsp. rum
1 tsp vanilla extract
DIRECTIONS:
Beat butter at medium speed until soft.
Add powdered sugar (one cup at a time)
Beat at low speed until blended.
Add rum, eggnog, and vanilla, beating until blended
Frost, sprinkle with cinnamon and enjoy your blissful bites! YUMMMMM!!!!!
