{The Great Cookie Recipes} Chocolate Rocky Road Cookies By Alexandra of Enchanted Events and Design

 Okay I know a little late on the cookie posts but I am going to send you 2 today since I was not able to get it together for Monday and then yesterday I had to interrupt with Genevieve's amazing cupcakes. But these look so yummy and easy from Alexandra of Enchanted Events and Design!! Enjoy!

 Ingredients

* 1/2 cup butter
* 1 cup semisweet chocolate chips
* 1 cup white sugar
* 2 eggs
* 1/2 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 1 cup chopped walnuts (large chunks)
* 48 miniature marshmallows



Directions

1. Preheat oven to 400 degrees F (200 degrees C). In a small sauce melt together the butter and 1/2 cup of the chocolate chips, stirring frequently. Remove from heat and set aside to cool.
2. In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.
3. Drop dough by rounded teaspoonfuls onto unprepared cookie sheets. Bake for 6 minutes in the preheated oven. Then press a 3-4 miniature marshmallow into each cookie and bake for 1-2 more minutes. Remove from baking sheets immediately to cool on wire racks.

I got this recipe from allrecipes.com. I wanted to make a rocky road cookie (never have before) because I usually have chocolate chips, marshmallows, and nuts on hand. I did several attempts at this cookie to test the perfect time to put the marshmallows on. The original recipe said to put them on immediately but I found they got really chewy and hard if you put them in that early. I found the best time was 1-2 minutes before the cookies were done, or even immediately after you take them out depending on if you want the marshmallow to be slightly toasted. Also make sure not to chop the nuts up too much. If they’re too small then you don’t get much of “rocky”ness to the cookies

  1. I actually made these again last night! Used peanuts this time since I used up all my other nuts making the first batch. Still yummy!
