Gingerbread Cupcakes

Ugh! I have been sick all last week and have so much catch up to do. First and for most here is the recipe I promised for the gingerbread cupcakes I made for the Doudian Annual Holiday Party. I decorated them with the Let It Snow cupcake toppers but my daughter was having a melt down (she was the first of us all to get sick) and I had to leave quickly. Bummer! But I think they turned out yummy and I will make another batch for Christmas!


**Ingredients
3/4 cup of flour
2 tsp ground ginger
3/4 tsp ground cinnamon
1 piece of preserved ginger, chopped
3/4 tsp baking soda
4 tbsp milk
6 tbsp butter, softened
1/3 cup firmly packed brown sugar
2 tbsp molasses
2 eggs, lightly beaten

**Directions
-preheat oven to 325F
-Sift flour, ground ginger, and cinnamon together into a bowl. Add the chopped ginger and toss in the flour mixture until well coated. In a separate bowl, dissolve the baking soda in the milk.
-Put the butter and sugar in a bowl and beat together until fluffy. Beat in the molasses, then gradually add the eggs, beating well after each addition. Beat in the flour mixture, then gradually beat in the milk. Spoon the batter into cupcake pan.
-Bake for 20 minutes
